“Where do you get your protein?” This is the #1 question people ask me when they learn that I follow a vegan diet. Ranked at #2 is “what do you eat for breakfast?”
I have always been a bit puzzled by this question because I have never struggled to come up with quick and easy vegan breakfast ideas. Since many simple breakfast options seem to pop into my head at a moment’s notice, I thought that I might share them with you. My list of suggested breakfast options don’t include homemade baked goods, pancakes, waffles or scrambled tofu recipes because they are not “quick and easy” (unless you’re a Martha Stewart type). Let’s leave the more complicated stuff for those lazy weekend mornings!
HERE IS MY LIST OF “QUICK & EASY” VEGAN BREAKFAST IDEAS…
1. Van’s Wheat, Gluten, Dairy & Egg Free Frozen Waffles
These waffles come in a few varieties, but I like the blueberry ones. Just pop 1 or 2 frozen waffles into the oven on medium setting for 2 to 3 minutes and voilà…breakfast! I would enjoy these with pure organic maple syrup.
2. Arrowhead Mills Organic Gluten Free Quinoa Rice & Shine Hot Cereal
Simply add 1 cup of water to 1/4 cup of cereal in a microwave safe bowl, microwave for 1 minute and stir. You now have a quick, delicious and nutritious breakfast!
3. Engine 2 Rip’s Big Bowl Cereal With Unsweetened Vanilla Almond Milk
As you know, I am a big fan of the new line of Engine 2 food products. I always make sure to keep a few boxes of Rip’s Big Bowl cereal in my pantry for a quick and easy breakfast. These cold cereals come in several flavors including the Original, Triple Berry Walnut and Banana Walnut. The Triple Berry Walnut is my favorite! I love to top it with unsweetened vanilla almond milk, ground flax seeds and berries. Any other vegan cold cereal products will also do the trick.
4. Engine 2 Organic Morning Blend Grain Medley
This is one of the newest Engine 2 products to hit the market, and I think it’s a real winner! Grains for breakfast are fantastic, and one serving of Rip’s Morning Blend Grain Medley provides 7 grams of your daily recommended dietary fiber. To prepare, just place frozen blends into a covered microwave-safe dish, add 1 or 2 tablespoons of water and cook on high for 3 to 4 minutes. Then drain. How hard is that?
5. Amy’s Gluten Free Tofu Scramble Breakfast Wrap
I’m a huge fan of Amy’s products, and this breakfast wrap is no exception. It can be microwaved in a jiffy and it’s delicious. Make sure to read the Amy’s product packages very carefully because not all of her items are vegan, but this one is. I sometimes make this for dinner when I am too tired to cook.
6. Grainaissance Mochi
Mochi is a nutritious “bake and serve” block of pounded whole grain rice. It is all natural, wheat and gluten-free, and has no additives, preservatives or colorings. Mochi can be eaten in a variety of ways; however, the easiest way is to cut the block into 1 1/2″ squares and bake in a pre-heated oven at 450 degrees for 8 to 10 minutes. You can cut the mochi into the squares at night and store in your refrigerator to make it easier to prepare the next morning.
Grainaissance is my favorite brand of mochi. I love the Raisin & Cinnamon flavor with some pure maple syrup. Grainaissance just came out with a new mochi flavor called “Chocolate Brownie!”
7. Grainaissance Amazake
Amazake is a delicious and nutritious dairy-free, nectar-like shake made from 100% organic whole grain brown rice. “Koji” or cultured rice is added to the cooled whole grain rice causing enzymes to break down the carbohydrates into simpler sugars (not refined). Amazake comes in a variety of great flavors and makes a quick and easy dessert, snack or meal on the run. It can also be blended with strawberries, a banana or other fruit for a thick and creamy non-dairy smoothie.
8. Whole Soy & Co. Yogurt
Whole Soy & Co. makes my favorite non-dairy yogurt, hands down! There are so many delicious flavors and I love them all. I like to have some for breakfast with added ground flax seeds and berries. Whole Soy & Co. Yogurt is organic, non-GMO, vegan and gluten-free.
9. Whole Fresh Fruit
Rory Freedman and Kim Barnouin, authors of Skinny Bitch, recommend eating whole fruit for breakfast. They advise eating one whole piece of fruit and waiting 10 minutes. If you are still hungry, eat another piece of fruit. Wait 10 minutes. If you are still hungry, eat another piece of fruit. Stop at 3 fruits.
10. Fresh Raw And Organic Unpasteurized Cold Pressed Juices
If you are rushing around in the morning and don’t have time to press your own fresh juice, what about the pre-bottled juices by brands such as BluePrint or Organic Avenue?
11. Food For Life’s “Ezekiel” Bread or English Muffins
How difficult is it to toast a slice of Ezekiel bread or “English Muffin?” You can top it with your favorite fruit spread or nut butter, adding some banana slices and ground flax seeds too!
12. French Meadow Bakery’s Bagels
The French Meadow Bakery makes some excellent vegan bagels. There are quite a few varieties of bagels including Hemp, Sprouted Grain, Sprouted 16 Grain & Seed, and Sprouted Cinnamon Raisin. My favorite is the Sprouted 16 Grain & Seed which I often toast and spread with Tofutti “Better Than Cream Cheese” and apricot fruit spread for a real treat!
13. Vigilant Eats Organic Superfood Oat-Based Cereal
Breakfast doesn’t get any easier than Vigilant Eats Superfood Cereal which comes packaged in individual containers with a portable spoon. Just add some cold water or your favorite non-dairy milk and that’s it! No need to heat up or microwave anything. It comes in four delicious flavors too!
