Dr. Joel Fuhrman appeared on the Dr. Oz Show yesterday to talk about his New Kitchen Rules To Lose Weight And Reverse Disease.
Dr. Fuhrman recommended Two Kitchen Must-Haves to change the way you eat:
1. A Juicer
Dr. Fuhrman stated that he uses his juicer to make vegetable soup bases. He prepares soups on weekends by juicing vegetables such as carrots and celery, and uses the vegetable soup throughout the week so he doesn’t have to cook everyday. He also juices the pulp to prevent waste.
2. A Blender
Dr. Fuhrman suggests using a blender to make homemade “ice creams and sorbets” by mixing frozen fruit. The blender can also be used to grind herbs and seeds.
He also recommends using a blender to make homemade salad dressings using nuts and seeds in place of vegetable oil. He stated that vegetable oils, at 120 calories per tablespoon, are rapidly absorbed into the bloodstream which makes you gain weight. On the other hand, using nuts and seeds in dressings is disease protective, and makes you lose weight.
Dr. Fuhrman made a Cashew-Orange Salad Dressing on the show by blending 2 peeled navel oranges, a small piece of lemon, cashews, sesame seeds and apple cider vinegar (you could also use rice vinegar). The recipe is provided below.
Foods To Live By:
One of Dr. Fuhrman’s patients appeared on the show with her success story. Prior to her treatment with Dr. Fuhrman, she had high blood pressure, diabetes, and weighed 231 pounds. After following Dr. Fuhrman’s plan for about one year, she reversed her diabetes, lowered her blood pressure, and lost 100 pounds. Significantly, she no longer needs any medications.
Dr. Fuhrman provided 4 kitchen rules to live by:
1. Get protein from vegetables.
Dr. Fuhrman pointed out that plant foods such as spinach, chickpeas and broccoli are high protein foods. He stated that protein from plants lowers cholesterol, whereas protein from animals raises cholesterol. The fiber in plants removes cholesterol from the body, and prevents the cholesterol from going into the bloodstream.
2. Eat meat every other day, just 1 to 3 ounces.
Although Dr. Fuhrman stated that you could eat meat every other day (just 1 to 3 ounces), his patient who appeared on the show said that she no longer eats steak and doesn’t miss it. Dr. Fuhrman suggested eating completely vegetarian in between the meat-eating days.
3. Eat slowly digestible starches.
Dr. Fuhrman said that slowly digestible starches such as lentils, peas, beans, and barley take 3 to 4 hours to digest which feeds glucose into the bloodstream slowly. This lowers glucose levels which helps you rid yourself of diabetes and keeps you thin.
4. You must have dessert every day.
Dr. Fuhrman says “you can have your pie and eat it too!” and “having a healthy dessert will prevent you from overeating.” His healthy dessert recommendation was a Raw Apple Carrot Beet Pie Topped With Banana Walnut Ice Cream (made from frozen bananas, non-dairy milk and walnuts). Although I haven’t made it yet, I posted the recipe for your convenience. It looks really good!
DR. FUHRMAN’S APPLE CARROT BEET PIE WITH BANANA WALNUT
ICE CREAM
Ingredients:
Pie Crust
1 cup almonds
1 cup dates, pitted
2 tablespoon chia seed ground
1/3 cup oatmeal, ground.
1/4 cup water
Pie Filling
1/2 cup Muscat or other sweet dessert wine
1 cup unsulfured dried apples, chopped
3 apples, grated
1/3 cup raisins
1/4 cup walnuts
1 1/2 cups shredded carrots and beets
1/ 2 cup shredded coconut
Banana Walnut Ice Cream
Ingredients:
2 ripe bananas, frozen
1/3 cup vanilla soy milk (hemp or almond milk may also be used)
1/2 oz walnuts
Directions:
Freeze ripe bananas at least 12 hours in advance. To freeze bananas, peel, cut in thirds
& wrap tightly in plastic wrap.
Blend or food process the almonds and oatmeal. Mash dates with water and ground
chia seeds to make a date chia paste and kneed this paste into the oat/almond flour. Then
press into glass pie plate.
Mix and marinate the chopped dried apples with the wine overnight in fridge. Then blend together the apples, walnuts, raisins, and dried apple mixture and when smooth,
mix in a bowl with the shredded carrots, beets and coconut and spread over pie crust
pressing it down into the pie.
Let sit in refrigerator with glass plate on top, until ready to serve
with banana walnut ice cream.
Blend the frozen bananas, soy milk and walnuts together in a high-powered blender or a food processor until smooth and creamy.
Orange Sesame Dressing
Ingredients:
2 tbsp unhulled sesame seeds
1/4 cup raw cashew nuts or 1/8 cup raw cashew butter
2 oranges, peeled and diced
2 tbsp Dr. Fuhrman’s Riesling Raisin Vinegar or balsamic vinegar
Orange juice, if needed to adjust consistency
Directions:
Toast the sesame seeds in a dry skillet over medium high heat for 3 minutes, shaking
the pan frequently. In a high powered blender, combine sesame seeds, cashews,
oranges & vinegar. If needed, orange juice can be added to adjust consistency.
