I always strive to eat whole, unprocessed foods and to make all of my meals from scratch. As summer rolls around, I am finding it more and more difficult to fuss in the kitchen especially when my sons won’t eat many of the dishes I prepare (not for lack of my trying!). I have just started to believe that there is no crime in quick, pre-made vegan foods as long as I don’t use them every day. Isn’t the idea of a family barbecue to sit back and relax without too much hard work? Here is a photo of some of the foods I will be grilling and eating at our family’s Memorial Day barbecue tomorrow. Just for the record, the Amy’s Quarter Pounder Veggie Burger is my family’s favorite and I always serve it on a toasted whole wheat bun from Whole Foods. I usually top it with lettuce, tomatoes, onions, avocados and “Annie’s” brand organic ketchup. I heard that the Field Roast faux hot dogs were very good but the supermarket ran out so I bought the YVES brand (they are JUMBO). The Amy’s vegan baked beans are a winner and what could be easier than frozen corn? I have never been unhappy with any of the Gardein products so I decided to give the BBQ skewers a try. I will round off the barbecue with a simple salad, a side of raw, naturally fermented pickles (I like the “Bubbie’s” brand) and some watermelon for dessert.
