The other night I was flipping through Kathy Freston’s wonderful book “Veganist,” and she mentioned that she loves to saute Field Roast Italian Sausages with onions, peppers, fennel root, garlic and tomatoes and serve it over pasta. Since I love to make simple meals with Field Roast Sausages, I decide to make an impromptu dinner a la Kathy Freston. I added mushrooms to the mix and used tomato paste and canned crushed tomatoes for my vegan sausage and pepper dish. I decided that Kamut Spirals were the healthiest pasta choice since one cup has a whopping 6 grams of fiber and 10 grams of protein!

Trust me when I tell you that it was simple to make and very satisfying! The only negative was that it may have tasted too much like a traditional Italian sausage and pepper dish (ugh…and by that I mean with meat), but delicious nevertheless! Enjoy this simple recipe…
VEGAN ITALIAN SAUSAGES AND PEPPERS OVER KAMUT SPIRALS
Serves 4 to 6
Ingredients:
1 box of Eden Organic Kamut Spirals
1 package of the Italian flavored Field Roast Sausages (containing 4 individual sausages), sliced into disks
2 tablespoons olive oil (add a little more to pan, if necessary)
1 6-ounce can of tomato paste
1 28-ounce can of crushed tomatoes
4 to 6 garlic cloves, minced
2 medium sized onions, sliced
1 box of pre-sliced mushrooms (I chopped them up a little more too)
1 container of pre-sliced red, yellow and green bell peppers (or slice about 3 whole bell peppers into wedges)
1 fennel root, chopped
Salt & Pepper, to taste
Daiya Mozzarella shreds, if desired
Directions:
Cook the kamut pasta according to the directions on the box and set aside.
In a large frying pan or wok, sautee garlic, onions and fennel root in 2 tablespoons of olive oil (or a bit more, if needed) until onions start to sizzle. Add the tomato paste to the pan and mix everything together.
Add the sausages, peppers and mushrooms to the pan and stir everything together. Add a small amount of water to the pan to get everything cooking and sizzling. Mix everything together and let cook for about 5 to 10 minutes.
Add the can of crushed tomatoes to the pan and mix everything together. Stir and cook until everything in the pan is heated through. Season with salt & pepper, to taste.
Place the cooked Kamut Spiral Pasta onto a large serving platter. Serve the sausage and pepper stir-fry on top of the Kamut Spirals. Sprinkle with Daiya mozzarella shreds, if desired.
